[Life: Make] Banana Walnut Sour Cream Pancakes
If you’ve been to Bubby’s you likely understand the love for the sour cream pancake. These are super easy to make (less than 10 minutes) and totally delicious. You can sub any fruit and totally fabulous!
Ingredients:
1 cup whole wheat flour1/2 cup regular all-purpose flour3 tablespoons sugar2 teaspoons baking powder1 1/2 teaspoons kosher salt1/2 cup lite sour cream3/4 cup plus 1 tablespoon low-fat  milk2 extra-large organic or brown eggs1 teaspoon pure vanilla extract1 teaspoon grated lemon zest1/2 cup of walnuts, crushedUnsalted butter2 ripe bananas, diced, plus 2 extra, sliced for garnishNatural maple syrup
Directions:Sift together both flours, sugar, baking powder, and salt. In a separate bowl, whisk together the sour cream, milk, eggs, vanilla, and lemon zest. Add the wet ingredients to the dry ones until combined.Melt 1 tablespoon of butter in a large skillet over medium-low heat . Ladle the pancake batter into the pan to make 4 pancake circles. Distribute a rounded tablespoon of bananas on each pancake along with a teaspoon of nuts. Cook for 2 to 3 minutes and then flip the pancakes and then cook for another minute until browned. Wipe out the pan, add more butter, and continue cooking. Serve with sliced bananas, extra walnuts if desired, and maple syrup.
