[Life: Make] Banana Walnut Sour Cream Pancakes
If you’ve been to Bubby’s you likely understand the love for the sour cream pancake. These are super easy to make (less than 10 minutes) and totally delicious. You can sub any fruit and totally fabulous!
Ingredients:
1 cup whole wheat flour
1/2 cup regular all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1 1/2 teaspoons kosher salt
1/2 cup lite sour cream
3/4 cup plus 1 tablespoon low-fatĀ milk
2 extra-large organic or brown eggs
1 teaspoon pure vanilla extract
1 teaspoon grated lemon zest
1/2 cup of walnuts, crushed
Unsalted butter
2 ripe bananas, diced, plus 2 extra, sliced for garnish
Natural maple syrup
Directions:
Sift together both flours, sugar, baking powder, and salt. In a separate bowl, whisk together the sour cream, milk, eggs, vanilla, and lemon zest. Add the wet ingredients to the dry ones until combined.
Melt 1 tablespoon of butter in a large skillet over medium-low heat . Ladle the pancake batter into the pan to make 4 pancake circles. Distribute a rounded tablespoon of bananas on each pancake along with a teaspoon of nuts. Cook for 2 to 3 minutes and then flip the pancakes and then cook for another minute until browned. Wipe out the pan, add more butter, and continue cooking. Serve with sliced bananas, extra walnuts if desired, and maple syrup.
